not know about you but I would put the rocket a bit 'all over the world so why not give us a risotto. This is a great first course healthy, the rice that I used is biodynamic, the rocket as well as being a good source of Vitamin C also has a good amount of minerals, protein and what about the pine nuts are rich in calcium and vitaminaA. So cereal + vegetable + seeds is more ... .. good good!
Ingredients for 4 people: 350 gr
. 2 medium shallots rice
7 tablespoons extra virgin olive oil 1 bunch arugula
(100 gr. raw)

Preparation: fry gently peeled and chopped shallots in a saucepan with 4 tablespoons of olive oil, toast the rice and continue the cooking adding the broth. Meanwhile, blanch the rocket and pass it in cold water to keep alive the colors, squeeze it and then pass it to the mixer with the toasted pine nuts, 3 tablespoons of oil, a pinch of salt (but just a pinch or you risk that the risotto becomes too salty ) and add it to the risotto halfway through cooking. Complete cooking of the risotto and serve.
